One of the most popular meats for grilling is beef. It’s no surprise; you can choose from numerous cuts depending on your mood. There’s flank, skirt, steak, brisket, tenderloin, sirloin and more, all great for the grill. So if you’re looking for delicious beef dishes to try, these hearty grilled beef recipes are just what you’re looking for!

Peaches & Spice Ribeye Steak

What do you need:

  • 6 beef ribeye steaks, 1-inch thick
  • 12 peaches, peeled, pitted, and halved
  • 1/4 cup balsamic vinegar
  • 2 tablespoons chopped thyme
  • 1 tablespoon butter, melted
  • 1 tablespoon of salt
  • 1 tablespoon plus 1/2 teaspoon ground black pepper
  • 1 tablespoon paprika
  • 2 teaspoons of garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons lemon pepper seasoning
  • 1 teaspoon of sugar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon crushed red bell pepper
  • fresh thyme sprigs

Combine salt, 1 tablespoon ground black pepper, paprika, garlic and onion powder, lemon pepper seasoning, cumin, and red pepper flakes. Rub both sides of each steak with the mixture. Cook steaks on preheated grill, covered, to desired doneness. When it’s ready, remove it from the heat and let it rest for 8 to 10 minutes. Grill peaches over indirect heat for 5 minutes. In a medium bowl, whisk together the remaining black pepper, balsamic vinegar, minced thyme, butter, and sugar. Toss grilled peaches into the mixture then serve with steak topped with sprigs of fresh thyme.

Skirt Steak Salad with Grilled Cilantro Dressing

What do you need:

  • 1/4 pound beef flank steak, trimmed of fat and diamond-grooved
  • 1 corn, without shell or silks
  • 4 cherry tomatoes, cut in half
  • 2 sweet yellow bell peppers, seeded and cut in half
  • 2 onions, chopped
  • 2 cups of mixed vegetables

cilantro dressing

  • 1 clove garlic, peeled and quartered
  • 3 tablespoons lime juice
  • 2 tablespoons chopped fresh coriander
  • 2 tablespoons minced shallot
  • 1 tablespoon of water
  • 1 tablespoon olive oil
  • 2 teaspoons of honey
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt

Blend garlic, lime juice, cilantro, shallot, water, olive oil, honey, chili powder, cumin, and salt in a blender or food processor. Pulse until mixture is well combined and smooth. Place half of the dressing in an airtight container and chill in the refrigerator until ready to use. Pour the remaining half into a resealable plastic bag and place the steaks in the bag. Refrigerate for 30 minutes. When ready, remove the meat from the bag and discard any excess marinade. Brush corn, bell peppers and onions with olive oil. Grill beef and corn over medium heat for 20 minutes or until cooked through. Grill the sweet peppers for the last 8 minutes and the onion for the last 4. Cut the fillets into thin strips. In a serving platter, combine grilled meat, grilled vegetables, greens, and tomatoes. Top with cilantro dressing.
