Yield: Serves 2

Ingredients:
1/2 Liter Whole Milk
1/3 cup Makhana (lotus seeds)
1/2 cup of sugar
1 tablespoon of butter
1/2 teaspoon saffron threads
1 teaspoon cardamom powder

Other ingredients:
1 – 2 peaches/mango diced
1/4 cup croutons
1/4 cup chopped apple
1/4 cup of pomegranate pearls
2 tablespoons chopped pistachio

Method:
In a pan, heat the ghee and toast the lotus seeds for 5 minutes.
Pulse in a blender once to make a coarse powder. Stand aside.
Soak the saffron threads in a tablespoon of milk and set aside.
Take the milk in a thick-bottomed saucepan. Add the saffron threads and cardamom powder.
Simmer over low heat. Keep stirring at regular intervals.
Once the milk has reduced to half the original amount, add the lotus seed powder.
Let the milk simmer until thickened, stirring at regular intervals.
Add the sugar, simmer the phirni for 2 to 3 minutes, then turn off the heat.
Let the phirni cool completely. Store in refrigerator until ready to serve.
Arrange it in serving glasses. Layer croutons, nuts, and fruit.
Serve Phirni Perfect chilled.
